Powerful and full flavored, with plenty of plummy fruit, and excellent structure. The Minervois Tradition is 60% Carignan (from vineyards up to 100 years old), 30% Syrah and 10% Grenache. It is aromatic, full and densely colored, with a long finish of dark fruits. The wine is elegant and balanced and is both enjoyable to drink young and can age 5-7 years.
Château d'Oupia Description
50% Carignan/30% Syrah/20% Grenache. The Carignan ranges in age from 50 to 100 years old, on hillsides in the AOC of Minervois; the Syrah is over 40 years old. The fruit is hand-harvested, mostly destemmed, and fermented with selected yeasts in vat. After a maceration of several weeks, it is aged in a combination of vat and used barrels for 2 years.
